Perennial 'Eclipse' asparagus is grown in the vegetable garden for its tender and delicious young shoots. It is picked from April to June, from the third year of planting; then it is possible to harvest it for almost 15 years afterwards. This vegetable is particularly rich in vitamin C and is known for its delicious taste. The superb foliage is very decorative in summer, even taking on a very surprising yellow autumn color.
