A beautiful richness of our Quebec heritage, this shallot is perfectly resistant to our winters, and can be cultivated sustainably. We harvest the new shoots in spring which will be eaten like regular shallots, and then, once the plant has multiplied, we harvest the bulbs towards the end of June to dry them for a month.
