Variety developed in Quebec in the 1970s. Early producer with heavy yields of medium-sized fruit. Good choice as a canning tomato, ideal for northern climates.

Tomatoes, glorious tomatoes!

Tomatoes are incredibly versatile in the kitchen. Raw, served as-is, in a sandwich, on bruschetta or in a salad. Cooked, they are the basic ingredient for so many delicious soups, sauces and salsas.

Bruschetta:

  • 3 tomatoes, de-seeded and diced
  • 1 shallot, finely chopped
  • ½ cup fresh basil, chopped
  • 2 teaspoons balsamic vinegar
  • 2 tablespoons olive oil
  • I clove garlic, finely chopped
  • salt and pepper to taste

Mix and spread on toasted bread.

Colourful tomato salad:

  1. Combine: red, yellow, orange and purple cherry tomatoes; mini bocconcinis sliced in rounds; a few leaves of fresh basil, shredded.
  2. Drizzle with olive oil and balsamic vinegar.
  3. Add freshly ground pepper and salt to taste.

Tomato sauce:

  1. Finely chop a medium onion then sauté in olive oil.
  2. Add 2 tablespoons chopped garlic, 15 finely diced Italian tomatoes
  3. Salt and pepper to taste and ¼ cup olive oil.
  4. Bring to the boil, reduce heat and simmer for 45 to 60 minutes, stirring occasionally.
  5. Add ¼ cup of fresh basil, chopped, and continue to simmer for 5 minutes.
  6. Purée the sauce until smooth with a hand blender, if you wish.
